Malines
Belgium's great table bird, raised around Mechelen for the Brussels markets. Cuckoo-barred plumage over a huge frame, with light feathering down the outer shanks. Cocks push twelve pounds. Belgian law protects the name of the traditional slow-raised Mechelse Koekoek chicken.
A gentle giant that eats like one. Grow them slow on pasture for a carcass worth the feed bill. Low fences hold them fine. Watch summer heat on a bird this heavy, and give wide roosts so the breast keeps clean.
