Cubalaya
Cuba's national chicken, bred there through the 1800s from Asian game fowl that came over on the Manila trade routes. The tail sweeps down and back in a curve keepers call the lobster tail. Birds mature slowly, sometimes taking three years to finish. The APA recognized the breed in 1939.
Bred for tropical heat, so summer scorchers barely register. Wet or cold winters call for a dry, draft-free coop. Hens brood readily and mother well. Give the flock room to range and the birds stay busy and calm.
