Bresse
The famed French table breed, white-feathered with blue legs and a red comb. Only birds raised in the Bresse region may legally carry the French name, so US stock goes by American Bresse. Finished the traditional way on dairy-soaked grain, the meat comes out marbled and fine-grained. Hens lay better than most meat breeds.
The traditional method ranges them on pasture, then finishes two weeks on milk-soaked grain in low light. They are hardy in most climates, cool and damp included. Give the single comb the usual frost care.
